Creamy Tuscan Chicken and Asparagus

6 (4 ounce) boneless skinless chicken breasts
1 bag Wildtree Tuscan Skillet Meal Seasoning
2 ounces sun-dried tomatoes
2 tablespoons Wildtree Natural Grapeseed Oil
1 cup low-sodium chicken stock
1/2 cup half & half
8 ounces asparagus trimmed and cut into 3-inch pieces
1 cup dry brown rice prepared according to package directions
- Combine chicken breasts, Tuscan Skillet Meal Seasoning, and sun-dried tomatoes in a large bowl or gallon zip-top bag. Mix until chicken is evenly coated with seasoning.
- Heat Natural Grapeseed Oil in a 12-inch nonstick skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes on each side.
- Add chicken broth and half & half and stir to combine. Reduce heat to low, cover, and cook for an additional 3-5 minutes.
- Add asparagus to the pan and cook for an additional 3-5 minutes or until chicken is cooked through: 165 degrees F. Serve chicken with sauce over cooked brown rice.
