A gorgeous dish full of color and nutrients.
6 cups kale (chopped)
1 clove garlic (minced;optional)
3/4 cup corn
1/2 cup red sweet pepper (chopped)
1/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
In large frypan saute the kale and garlic in 2 tablespoons olive oil over medium heat, stirring constantly, for 10 minutes
Mix in corn, pepper, water, salt and pepper and cook for 10 more minutes.
Serve immediately.
