6 medium beets (cooked until tender, cooled)
2 apples (peeled and diced)
1 cup plain yogurt
2 tablespoons nuts (chopped)
1 tablespoon honey
Combine everything but beets in a small bowl. Stuff each beet with this mixture. Refrigerate until time to served.
Salad variation: Beets can be diced and combined with the other ingredients as a salad.
