Sweet Potato Fries

These can be sweet or salty or combination of both.  


2-3 lbs sweet potatoes

1/2 teaspoon salt

2-3 tablespoons oil


Scrub and dry potatoes (peeling is optional).  Cut into thin sticks or wedges and place in a large conatiner with a lid (or a plastic zip lock bag).  Pour 2 - 3 tablespoons of oil on, seal lid or zip bag and then shake to cover.  Sprinkle on salt and mix, along with a seasoning option below if desired.  Spread fries in a single layer on baking sheets.  Bake in preheated oven at 425F until golden brown and fork tender, 30-45 minutes, stirring and flipping fries every 5-10 minutes.  Serve immediately. 

There are many seasonig options for sweet potato fries - here are a few:

Rosemary garlic fries: 3 gloves garlic (minced) and 1 teaspoon dried rosemary (crushed).

Greek-style fries: 2 tablespoons lemon juice, 1 teaspoon dried oregano, 1/4 teaspoon pepper,  and 2 gloves garlic (minced).

Sweet Fries:  Drizzle with maple syrup or honey after they are baked and still warm.
