Vegetable Fritters

Easy fritter with few ingredients.


1/3 cup flour or whole wheat flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/8 teaspoon pepper

2 eggs

3 cups summer squash (shredded)

1/3 cup onion (minced) or 2 cloves garlic (minced)

1 tablespoon fresh parsley (choppled, optional)


Mix flour, baking powder, salt, pepper and eggs to form a smooth batter.  Add squash, onions or garlic and parsley.  Mix gently.  Very lightly spray a fry pan with oil and heat to medium hot.  Drop a lage spoonful of batter onto fry pan.  Fry until golden, turn and cook on second side until done.
