One of Chef Kyle's favorite Indian restaurants in Iowa City is called Masala. This "chana aloo" style burrito, is an ode to Masala's flavor, blending up a delicious infusion of coconut milk, fresh curry leaves, curry spice, fresh ginger/tumeric roots and fire roasted tomatoes, mashed up with organic slow cooked chickpeas, jasmine rice and boiled yellow potatoes.
