1 1/4 pounds tomatoes (finely chopped) 1 onion (finely chopped) 1 apple (peeled cored and finely chopped) 1 jalapeno pepper (seeded and minced wear gloves to prevent irritation) 1/4 cup fresh cilantro (chopped) 1 tbsp fresh lime (zest) 1/2 tsp salt fresh lime juice to taste
Combine the tomatoes, onion, apple, jalapeno pepper, cilantro, lime juice, lime zest and salt in a serving bowl. Serve at once or store, covered, in the fridge up to 2 days.
